Kale salad with a creamy chilli dressing

Ingredients (serves 4)

For the wilted kale:

  • 2 bunches of kale
  • 1 teaspoon salt
  • 1 punnet cherry tomatoes cut into wedges
  • 1 cup freshly shelled walnuts
  • 2 avocados peeled and cut into wedges

For the dressing:

  • 2 avocados, peeled
  • 1 tablespoon smoked paprika
  • 2 to 3 chillies finely chopped
  • ½ cup olive oil
  • 1 tablespoon of cumin powder
  • Juice of 1 lemon

Wash the kale and remove the stems and cut the kale into small pieces.

Place into a bowl, add salt and start to massage the kale until it wilts and takes on a cooked texture.

Add the tomatoes, avocados and walnuts to the bowl and mix in by hand.

Blend all remaining ingredients in a blender until creamy and mix into kale by hand.
