Mint, lime, cucumber and elderflower sparkler

Summer in a glass!

With so many barbecues, parties and events crammed into the Christmas holidays, a break from the constant stream of cocktails and champagne can be a welcome change.

To me, this mocktail is summer in a glass. It’s a tasty and oh-so-refreshing balmy evening beverage.

Ingredients (serves 6-8)

  • 2 limes, ends removed, halved and thickly sliced
  • Handful of mint leaves
  • 1 small Lebanese cucumber, sliced into rounds
  • 100ml elderflower cordial
  • 1 litre soda water
  • Ice cubes

Method
Using the end of a rolling pin, gently pound the lime and mint until just crushed. In a large pitcher, add lime slices and mint leaves. Add cucumber slices and elderflower cordial and stir to mix.

Add ice cubes to the pitcher and top up with the soda water.
