Banana piña colada smoothie

Summer mocktails

This tropical smoothie is a great way to start the day.

For a lighter version, replace coconut milk with coconut water and add any other fruits such as mango, strawberry and lime. These can also be frozen to make summer popsicles!

Ingredients (makes 1 litre, Serves 3-4)

  • 2 frozen ripe bananas
  • 1½ cups chopped fresh pineapple
  • 1 cup (400 ml) coconut milk
  • 1 tbsp coconut oil
  • 1 cup (250 ml) pineapple juice

To serve

  • Small handful of coconut 
flakes, toasted
  • Pineapple wedges

METHOD
In a food processor or blender, add all ingredients except coconut flakes and pineapple wedges and puree until smooth and creamy. Divide among serving glasses and top with toasted coconut flakes and pineapple wedges.
